Tear One Open

A golden bun torn open to show the soft center

The top is golden. The inside is soft and tender, with the fluffy, tear-apart center you’d expect from a dinner roll.

Then comes the question: where’s the flour?

There isn’t any.

The base is boiled potato, eggs and Greek yogurt. No yeast. No kneading. No waiting around for dough to rise.

Why These Buns Work Without Flour

Each ingredient has a job:

  • Boiled potatoGives the bun its body and a tender, fluffy crumb.
  • Greek yogurtKeeps the inside soft and moist.
  • EggsHold everything together so the buns keep their shape.
  • Baking powderDoes the lifting that yeast usually does, so there’s no rising time.

The result is a roll you can mix and bake the same afternoon. No kneading, no proofing and no special equipment.

You Don’t Have to Give Up Bread

Bread is one of those foods people rarely want to give up. Warm rolls with butter. A soft bun for a sandwich. A basket on the table at dinner.

The good news is that you can still have all of it, made a simpler way at home, with ingredients you can name.

In Elisabeth’s Own Words

The recipe comes from 100 Guilt-Free Bread Recipes, the bread cookbook by Elisabeth Dunkins. Here is how she explains the idea in the book:

“Good bread doesn’t have to be complicated. For years I thought real bread meant yeast, rising times, and a fair amount of trial and error.”
“It wasn’t until I started experimenting with what was already in my refrigerator — cottage cheese, Greek yogurt, a few eggs — that I realized simple ingredients could make something that still functioned like real bread. Something you could slice, toast, fold, and share.”
“You don’t have to give up bread. You just have to learn a few simpler ways to make it at home, with ingredients you recognize.”

“Do They Really Taste Like Bread?”

Soft and tender, with a fluffy tear-apart center, just like a dinner roll.

Carol M.
★★★★★
“I'll be honest, I bought this expecting hockey pucks. Every 'no yeast bread' I'd tried before was dense and crumbly. The cottage cheese oat sandwich loaf changed my mind on the first try — it slices clean, it toasts, and it actually holds a sandwich together. I've made it four times in two weeks.”
Carol M., 68, Ohio

“No Yeast. Will They Rise?”

Yes. Baking powder does the lifting that yeast usually does, so there’s no proofing and no waiting. You mix, shape and bake.

Gary L.
★★★★★
“My wife does the baking, not me, and she was skeptical about a bread book with no yeast in it at all. Three weeks later she's made the farmhouse loaf, the dinner rolls, and the cinnamon raisin bread, and the yeast packets in the pantry haven't moved. Simple enough that I've even made the flatbreads myself.”
Gary L., 70, Michigan

“I started with the Greek yogurt naan because it was only two real ingredients. Fifteen minutes later I was eating warm flatbread off the pan. No strange aftertaste. It's a weeknight regular here now.”
